Roasted Peppers

Roasted peppers are very easy to do.  When the peppers come out and go on sale I like to buy some up and get them roasted off.  You can freeze the roasted peppers and use them all year long, they go great in omelettes, on pizza or in panini!  

Arrange peppers of any kind on a roasting pan.



Oil them up with Extra Virgin Olive Oil and slide them into a slow oven 300 F will do.

Keep an eye on them they are going to be a couple of hours.

Second hour I like to throw in some garlic heads for roasting. Once again fill cut garlic heads with oil.



Let the peppers get really soft.



Enjoy some of them right out of the oven and bag the rest for the freezer.  They will last a very long time and you can use them to spice up all kinds of dishes over the winter months.
